- 1 sprig curry leaves

Method
- Cook and cool the rice. If cooking fresh, spread it on a plate to cool so the grains don't clump. Day-old refrigerated rice works even better.
- Temper the spices. Heat oil in a wide pan. Add mustard seeds; once they splutter, add the bay leaf, cloves, cinnamon and cardamom, followed by curry leaves.
- Sauté the base. Add sliced onions and green chillies; cook until the onions turn translucent. Stir in ginger-garlic paste and cook for a minute until the raw smell fades.
- Cook the tomatoes. Add chopped tomatoes with a little salt and cook on medium heat until soft and the oil begins to separate — about 6–8 minutes.
- Add the spice powders. Stir in turmeric, red chilli powder and garam masala. Cook for 1–2 minutes until fragrant.
- Mix in the rice. Add the cooled rice and gently fold it into the masala until evenly coated, being careful not to mash the grains.
- Rest and garnish. Cover and let it sit for 2–3 minutes off the heat, then garnish with coriander leaves. Serve warm with raita or papad.
